It was fantastic.

Clean out squash seeds. Just put feta, spinach, chopped basil, chopped 1/2 jar sundried tomatoes, chopped kalamata olives, grape tomatoes and hit with salt, pepper, garlic, oregano and olive oil drizzle in squash cavity. Roast at 400 for 60-70 min. Shred squash with contents in a bowl. Put back in squash skin and then drizzled with my homemade pesto and sprinkled with parmesan.

Could easily add some Italian sausage or other protein if desired.

First time doing smash burgers on the flat top.  Used ground veal.  Awesome.
