The key is keeping your container of bubbling sourdough happiness between 78-82 degrees throughout the process once you mix your starter with the flour, water, and salt. Remember that if temp is low, add time. If temp is high, you need less time. I keep my oven light on and, with the door cracked, it stays right at 83-84, which is a perfect 'proofing' temp. A little love and a little patience/flexibility and you're GTG. Also, this dude, while over the top in anal retentiveness, gives you all the goods combined with the book. He basically follows the same recipe I did.
