Steak fried in butter and oil in a heavy fry pan is how many top chefs do it.
The local paper ask several of the local chefs from the world class restaurants on the Vegas Strip how they cook their steak. The majority used a cast iron or steel frypan, butter, and salt/pepper only.
That's the only way I do it anymore. Those pan drippings are golden.

Bout three cloves of split fresh garlic and keep spooning that hot sautee’d butter and chunks of garlic over the cut as it cooks.

Remove them big chunks when done to your preference.

Butter, salt, garlic and pepper.

When I don't grill I have routinely done heavily peppered venison steaks in a very hot cast iron skillet with a little bacon grease. It's quite good. Have used cast iron for many beef steaks but never with bacon grease for whatever reason?

Left a 6 pack of Heineken out for about 20 minutes and it's COLD!

Take any steak out of a pan over off a grill, any day. Best way to do it. I grill out of the convenience of less mess, not setting off smoke alarms, and just for the sake of getting outside with beers and away from the ladies in the house. Yes, have done it in bacon grease. Wonderful. Venison even better.
