What cooks an egg without turning it over is using the spatula to flip hot bacon grease over the top. That way complete cooking of the white is achieved with nearly zero cooking of the yolk for a perfect sunny side up fried egg.

My wife's uncle liked his eggs that way, he ordered them, basted.

Even scrambled eggs have the potential to wind up with some white that is snot if they are undercooked - especially if they are scrambled with a fork.

I always put just a 1/2 teaspoon or so of water in the pan before putting the lid on.

Since you mentioned it, I believe that they might have said that. Old timers disease jumping on me. miles

Let them sit on the counter @ room temp for two days prior to cooking. They’ll peel just fine.

The wife likes an egg fried to hell and back. Crispy edges.

I like a runny yolk. Either over easy or Put the lid on with a few drops of water. I’ll baste with grease on occasion as well.

When I'm grease basting them I can closely monitor how they're cooking, so I don't turn them over.

Yup just a quik flip and over they go. I can do up to 6 at a time,
