Exactly. A mechanical thermostat works just FINE on a fridge.

Same thing on a dryer. All I need is a few speeds, a few temps, and a timer.

“Motherboards”= “planned obsolescence”

The place we’re in now has a Built-in Sub Zero fridge/freezer. Weve been here 5 years now and that thing just rocks! It’s about 13 years old now. The sub-z has a separate cooling system for both the fridge and freezer so you can set them to exactly what you want and they’ll maintain it. They’re not cheap though.
