a little late but.....we have bought a few halves over the years...but always go back to Costco because their meat is good...you know what you are getting....some of the issues have been...to tuff...one tasted like the fat was a little rancid.....or just a so so taste...never anything like what the producer claimed it to be.
but I still like the idea of getting a whole beef....so jim has been on here talking his beef up....barley fed .....back rubs you name it. so I told my wife lets give this guy a try. Jim answered a few questions...gave me the price so we had a deal.
he never asked for any money up front even though I offered.....he delivered to butcher shop .....my wife talked to the very nice and helpful lady there.....big difference between hilger meats and the one I had to deal with in big timber....the people at hilger were great .
we now have had steaks...roasts....and most important to me hamburger. .....Jim and his crew ( wife and kids) nailed it ....this is great tasting beef....tender and very rich tasting.
I told my wife if this beef was just average I wasn't going to do a write up on it.....but this did not disappoint... thanks Jim and crew......I will buy from you again......now get those pigs going
I also like that I was able to buy direct and deal with a local butcher......win win all the way around......bob

I asked Jim if he had any kosher beef for sale and he told me he ran out of Jewish cows.

I can't say I'm surprised, getting beef from an actual rancher Local grass fed is the way to go, but the butcher shops here are booked almost a year out right now. We buy most ours from friends that ranch part time, store bought beef doesn't compare. I can really tell the difference in taste between feedlot and grass fed.

I don't what it i, but a butcher shop about 30 miles away has NY strip steaks worthy of the drive,
Which is surprising, I'm not normally a NY strip fan......15 a lb normal price,
Strips and Porters from the local PicnSav,,,,,meh......Hard to get enthused......

I have often thought of buying a "whole beef" or a Pig. What is the cost of doing so? Not sure that I would want to, but I know enough to butcher an animal, and have the tools for at least deer and Moose. Moving from the "city", and will be in the country where that might be a more viable option.

Maybe the bulk of meat at one time?
Folks like going to the piggy wiggly and getting 1# of burger meat at a time.

Yep, around here there are no real butchers anymore. Stores have a meat counter, but ask for anything other than what they stock (in the window counter) you will get the deer in the headlight look..

A few questions of my own if you don't mind.
What was the live weight of the critter?
What did the butcher shop charge?
And how many cubic feet of freezer space did this beast require?
April 16th we are taking two big steers to the butcher and I'm wondering how much freezer room we're gonna need.
