I worked on fishing boats for a short bit. It was interesting to see the business. Raising beef doesn’t seem to far removed. Obvious differences aside.

A lot of boats were putting efforts and resources into selling direct. The difference between what an Ocean Beauty payed per pound and what a consumer paid per pound was ridiculous. Depending on how much fish/beef you’re trying to move, the difference in logistics is even greater.

The market for farm direct meat and goods is huge and getting bigger.

It's crazy how far ahead butcher shops are booked

Our local processor has appointments to butcher hogs that haven't been born yet.

I'm not gonna say all, but most butcher shops are gov. regulated/inspected. It may not be very often, but they (inspectors) just show up, no warning, and the shop has to pass the regs or be shut down until they correct the problems.

We had a fellow opened a small grocery store and meat shop. His idea was to raise the beef, butcher, and sell it in his store. Nope, gov. regs against that. So he sold the store and just went into butchering.

If you want a beef and dont raise it yourself, he knows farmers that raise and feed out calves, and he'll get you one. You pay x amount per pound for the butchered, cut, and wrapped meat and he will pay the farmer. Or, you pay the farmer and he will just butcher, cut, and wrap. Either way, the butcher is not raising the beef. Maybe that's just state laws, I'm not sure.

Is farm to butcher to table cheaper than store bought meat?

What I am wondering as well. I pay enough to the grocery store chain. I would rather pay the folks that actually raise and butcher the animal. I am sure it would not be as much as the store charges, and I bet a bunch more than the folks get at an auction or sell wholesale to a slaughter house. I would be happy to pay in the middle, works for everyone.

I am doing some crude calculations and obviously there are variables involved but here's what I come up with for price per pound of actual packaged beef.


1400lb steer and butcher combined price around $2k?


And what you get 500lbs of meat?

$4/lb straight across for what goes in the freezer. Maybe $5?



Curious to hear what Bob says.


I might be low balling the steer price?


Neighbor thought he was about $600 for butcher fee, I figure $1/lb for the critter but that is probably low.

Just bought a half and it was around 5$/ lb take home after farmer and butcher were paid. It really does depend on what cuts you get as to how much u bring home weight wise. Its not really any cheaper for the burger but the steaks are and most importantly they arent pumped full of hormones and fed chicken litter

A 1400 pound steer probably hangs 825-850lb.

We use a few different slaughterhouses but they are .65-.85 per pound for the hanging weight, aged and vacuum packed. Then you can spend a bunch on extras. (Kielbasa, burger patties, etc.)

Plus the cost of the steer.
