I use 80'20 with a variety of seasonings, but for me the key to a good burger is cooking it on a flat top griddle. I bought a Blackstone two years ago and I don't believe I've made a grilled burger since.
Know fat, know flavor. No fat, no flavor. I tried going vegan, but then realized it was a big missed steak.

People get too creative with their poison. I just use 80/20 meat and grill it on the grill. I do mix mustard with some Miracle Whip for the buns and grill the buns in butter. Salt pepper toward the end of grilling and add lettuce, tomato, dill pickle and onion. Air fried potatoes and done. Hunt's catsup for the fries. Catsup on hamburger is sacrilegious.

Mine are ground deer with a little ribeye fat added. I put it in a bowl douse with some worchestershire sauce. Season with creole seasoning and some minced garlic. Mix well and pat out bun sized about 3/4 " thick. Cook on the grill. Charcoal or Gas.

I love Miracle Whip. Great on sandwiches and burgers. I like to mix it with a good amount of Chipotle Tabasco for burgers sometimes too.
