Know a few people that love Well’s, I’m not a big fan. We make it with apple cider vinegar, little ketchup, lotta black pepper and red pepper flakes.

2 cups cider vinegar
2 Tbsp brown sugar
1 Tbsp ketchup
2 Tsp black pepper
2 Tsp red pepper flakes
1 Tsp salt
Texas Pete (or your favorite hot sauce) to taste

I like a lot of hot sauces, but I think Tabasco or Texas Pete the best for this.
I soak down the pulled pork with it in the pan, then a big ketchup bottle full of this on the table. Usually have Stubbs around too.
Regular coleslaw made with Dukes always. Home made French fries and hush puppies served with ketchup mixed with hot sauce.

Damn, I’m hungry now!

Ditto what we know as "Chinese food." You ask a Mexican or Chinese chef about what they serve us, and they just shake their heads. It's all what we Americans imagine is Chinese or Mexican. It hardly resembles the real thing - in all its many varieties.

Apology to the OP. I am not a chef, not even a cook. I just eat. So no recipes from me. Wish I could, but...

And Italian.

I was just gonna say that.

A few years back we did a big project in Mexico, worked there for a solid year. Mostly flew in on Mondays and back on Fridays.

My boss made the comment more than once, "I can't wait to get back home (he lives in Green Bay, WI), so I can get some real American Mexican food." Not that the food we had was bad, just wasn't what we were used to eating routinely.

As to BBQ, I don't care what region it came from, if it is cooked well, I like it all. Some that many think is so great, I don't think is good at all.
