Good day for chili! I like McCormick's spice packets to make the base chili, mild only or my wife won't eat it. She considers ketchup to be a hot sauce! Mine I bump up with just a pinch of the mix in that little bag. Bought it from some madly insane pepper grower. Contains habanero, bhut jolokia, Trinidad scorpion pepper, and the king of them all the Carolina Reaper. Not for the faint of heart. It WILL give you a "Come to Jesus" moment!

That pepper mix sounds intriguing. The bag in the pic is full. The working bag is about 1/2 way used, and I bought them over a year ago. Some guy had them for sale on a Hot Pepper growing FB group. Wish I kept his contact info.

I make keto friendly chili nowadays, but before when I wanted beans in it, I used Ranch Style Beans. Those things are flippin’ good...!

Beans, no beans, as long as it's red I can make an argument either way.
Things that are not acceptable:
1. White chili (if it ain't red and if it ain't got beef, it ain't chili)
2. Chicken chili (see #1)
3. On spaghetti (wtf Cincinnati?)
4. Weird ingredients (black olives, green olives, carrots, corn, celery, you get the picture)
5. Vegetarian chili (enough said)
That's my top five, feel free to add to the list.
Know fat, know flavor. No fat, no flavor.
I tried going vegan, but then realized it was a big missed steak.

I’ve posted before how weird I thought cincy chili was the first couple times I had it.
I’ve grown to like it, but chili is just a name. To me, it’s a brown meat sauce as opposed to a red meat sauce, a la eyetalian spag sauce.

No beans, no tomatoes, just quality red chile sauce, and meat simmered to thick gravy. Refried beans on the side and a good flour tortilla to mop it up with, hard to beat the real deal. I will eat chile bean soup and enjoy it, just cant bring myself to call it chile when it's not.
