Good idea to saute the Bok Choy. I never thought about it. Cooked it in the soup only.

I occasionally make Shrimp & Baby Bok Choy. There are a few recipes online. I add a few things to suit my taste, like red pepper flakes.

I see you are in western Va. years ago I used to hunt in Clifton Forge , Oriskany, Roaring Run area. Great place to hunt deer and bear along withTurkey. A lot of government land along with Westvaco land .
I really loved that you could hunt all three at one time and shoot a hen or gobbler with a rifle. When they changed the seasons up , My group, usually 5-8 of us camping and hunting for a week. Sadly quit going-when the big game seasons got all busted up.

I'm about an hour north of Clifton forge but I know the area. Really nice country.

I miss turkey season being in during rifle season too. Not to mention fall turkey season after rifle season.
