It's called genetic load. Wife and I were talking about this earlier. It wasn't too long after the GMO/round up ready wheat became the rage that suddenly people had issues with it.
I would not buy something that runs on any kind of primer given the possibility of primer shortages and even regulations. In fact, why not buy a flintlock? Really. Rocks aren't going away anytime soon.

The allergy problem with wheat is often coumarin, rather than gluten. Coumarin is part of wheat's defense against mold. The varieties we eat today have over 1000X as much coumarin as varieties 100 years ago. Cows concentrate it in their milk, so people who are sensitive to it react both to wheat and to cow's milk. Goats, however, have an enzyme that breaks down coumarin. Many wheat sensitive people get along well with older varieties of wheat, such as spelt.
The wheat we eat today is very different from wheat 5000 years ago, or even 100 years ago.

Also have heard that some do fine with wheat based foods in Europe when traveling or buying imported wheat. Maybe its the Roundup ready wheat that is a factor too.

Our systems adapted to eating the legacy wheat strains that were available. In the last 50-100 years we have changed a lot about the varieties and genome of the wheat that we grow for better insect resistance, mold resistance, higher yields, better stalk strength to withstand rain and wind storms , and a host of things. Many of these changes have chemically changed the wheat we eat today and our metabolism systems haven't adapted yet to these changes. There are lots of sources of information about these changes on line if you care enough to look it up. My son is interested in this stuff and started researching it and clued me in to the information he gathered on this and many other subjects along this line... Cows milk is another food our systems sometimes don't tolerate well for much the same reasons- Lactose intolerance anyone?
