I find someone, binge on them and move on
lately I've been binging on a guy called towtrucker.
Dude is a car towing maniac, has hundreds of videos on him towing people's cars. Often he wears a bullet proof vest, but its actually not as confrontational as you'd expect.
I also like Puddin's Fab Shop, Vice Grip Garage, I do cars, Hoovies Garage and just about any winter camping video where they built a bush craft shelter. These guys out there sleeping in -20 degree weather under a tarp and some tree branches - I couldn't do it.
I'm over Scotty Kilmer - he's turned into a drama queen trying to keep people viewing his channel.
6 months from now I'll have a different collection of people I watch.

Sheep hunting and many of the mountain bow hunting vids are good. Ultra running races, and ski mountaineering and alpine climbing are often amazing. Drones and modern cameras and sound recording have made great footage very accessible. The Critical Drinker is a good movie review channel. I find myself agreeing with most of his reviews.
I also like Johnny's Reloading Bench, but he has slowed down on load testing and shooting and is doing a lot of livestreams now, which are too painful to watch.

Stumbled onto The Critical Drinker when one of his reviews - The End of the Movie Star - showed up on my home page, so I've watched a few of his other videos. He reminds me a little bit of the old Joe Bob Goes to the Drive-In reviews except not as tongue in cheek. He writes fairly straight forward reviews but from a point of view of promoting and encouraging the kind of classic values that make people and societies stronger and doesn't pull any punches when he reams Hollywood over its shallow or non-existent values. Plus, he does it in a Scottish accent which is fun to listen to.
