I raise beef. We eat beef more often than not.



A while ago I learned that the Japanese like grain fat beef really well. Like extra marbled, fatty and tender.


Apparently it was because they ate beef so infrequently that when they got a steak...they made it count.


Where we eat a lot of beef....the really rich stuff would get to be too much eventually.

I’ve had and cooked a fair amount choice beef, and am familiar with what it consists of.



I feel that with the prime, and especially, with the American wagyu- you get the best of both worlds- the flavor is intense and the texture is like butter.

Is it M-F beef? Probably not. But it’s deft something for a special occasion, and a bottle of good whisky.

I havent found the flavor to be superior to High choice or Prime.


Texture yes. Flavor no.



I am certainly not against it. Especially American Waygu.


I also raise premium lamb. I prefer hogget!

I have a bottle of what I've found to be the ultimate post-steak sipping whisky. It has a combination of smoke and flavors that work extremely well after a richly marbled grilled steak. Unfortunately, when it's gone there is no more to be found.
