I routinely bake a potato, eat the innards and then the skin. I’m sure folks do here as well.

If the eyes are pretty big, they usually get removed, mostly because my bride won't eat them.
Big question is - Who the heck peels potatoes? Haven't done that for decades in this house. Mashed, hashbrowns, fried, baked or in tater salad, the skin stays on.

Depends on type, and crop, of any given potato. For me, any yellow/Yukon/Gold or this skinned waxy potato, skin stays on. I don’t leave fuggin BARK on an Idaho or Russet in a whipped potato. Nor a potato salad. Nor just about any application except maybe baked and stuffed. Red bliss are thin skinned potatoes and go in same applications as the yellows.

Typically, only the eyes are removed, we don't care all that much for nekkid taters.

Paused to tell of a guy at work who always ate alone. Guys wondered why, he was a good fellow.
One day one snuck around to watch him. It was during the depression, And this guy was eating peels, he left the potato for his family. Only a broke ass, desperate MFer ate potato peels during the most desperate times.
Now people get all snooty and crap about they eat the damn things.
Pap used to make fun of picnics too.
