I routinely bake a potato, eat the innards and then the skin. I’m sure folks do here as well.

Never removed any “eyes” first

If the eyes are pretty big, they usually get removed, mostly because my bride won't eat them.

Big question is - Who the heck peels potatoes? Haven't done that for decades in this house. Mashed, hashbrowns, fried, baked or in tater salad, the skin stays on.

Depends on type, and crop, of any given potato.

For me, any yellow/Yukon/Gold or this skinned waxy potato, skin stays on.

I don’t leave fuggin BARK on an Idaho or Russet in a whipped potato. Nor a potato salad. Nor just about any application except maybe baked and stuffed.

Red bliss are thin skinned potatoes and go in same applications as the yellows.

People eating potato peels.😂😂😂😂

Paused to tell of a guy at work who always ate alone.
Guys wondered why, he was a good fellow.

One day one snuck around to watch him. It was during the depression,
And this guy was eating peels, he left the potato for his family.
Only a broke ass, desperate MFer ate potato peels during the most
desperate times.

Now people get all snooty and crap about they eat the damn things.

Pap used to make fun of picnics too.

"All my life I ate in the house and shït in the yard. Now days people
with perfectly nice homes [bleep] in the house and eat in the yard!"

Might be a bassackward Redneck, but I knew that!
Have even had them, Jacketed Potatoes were something we ate
in the fall. All those little taters you dug up had to be eaten, and
the ladies weren't going to peel them. Sometimes they are fine,
others they taste like dirt.

Why do we remove potato eyes?
Toxins. Solanine and chaconine, two types of natural toxins known as glycoalkaloids, are present in potato plants. They're most concentrated in the eyes, sprouts, and skin, but not the rest of the potato. These compounds are toxic to humans and can lead to a headache, vomiting, and other digestive symptoms.Dec 20, 2020
