I'll stick with microwave pork rinds. Shared a bag with my boys tonight. Although I think there's something to be said for eating the stuff with all the collegen and connective tissue still in it. I may have to stop by the butcher this week and get some bones for bone broth.

Chop the hoofs off with a axe about the same time you use the axe to bust the skull for brain n eggs always a day or 2 after killin timeπ Brains and eggs. Grandmother always made me stick two hogs at hog killing to make head cheese and brains. Never used an axe to get them

Growing up I ate pickled pigs feet regularly and enjoyed them. I never see any except tiny jars with possibly two feet in them.

Love 'em , Mom used to make whats called they call Sulz in Germany , lots of paprika and garlic. Hocks pickling now. If you wouldnt mind sharing the recipe please Wab?

As others have said, the pickled ones of decades ago were great - delightful vinegary tang, tender meat, and the challenge of picking them clean. Today, no. Can't even find the giant jars of them any more. If you manage to find any at all, they're disappointing at best.

AS they say, you can eat everything but the hooves and squeal. Back when I worked at a locker plant and custom kill place, we killed hogs on Saturday. There was an old black man that showed up and got the guts to make chiterlings, and picked up the toe nails to make some kind of medicine with. When you scald them, you can take a hay hook and slip the toe nails right off. miles

You can get it in menudo but I always pass. It just doesn't appeal to me. My mom thought it was delicacy.
