My wife and I have been watching Scott Rea wild game cooking and butchering videos for years. He has hundreds of videos up

The last clip I put up has terrible video and audio quality I'm guessing he just did it with a cell phone. The thing that struck me about it was what a big deal wild game dinning is in the UK and probably much of Europe.

This appears to be an upper class event. Perhaps this is a remnant of hunting is "the sport of Kings" culture?

I had always wanted to vacation in rural parts of the UK. I had some health problem pop up before I made that happen. My wife and I have been hunting together for 25 years now. It's all about the food for us. I say we are "trophy meat hunters".

I'm curious to hear from others about experience with European wild game culture?

That is an excellent video on how to make Venison Wellington! I wish I'd known of it years ago.

Many of the other videos or recipes I've seen by real chefs are much "fussier" but this guy is great in giving alternatives "You could do this, or this, or this... all good!"

I'm in Sweden, so I can only speak to the wild game culture here. Perhaps because we don't have any background with British recipes, so far nobody that I've made Venison Wellington for had ever had it before.

This wouldn't be the dish I'd make if it was the boys coming over (some of my friends could eat a whole "Veni Welli" each of the size Rea shows), but it is quite an impressive main course for a nice romantic dinner with a lady friend.

The romantic movie "The African Queen" (with Humphrey Bogart and Katharine Hepburn) seems to be totally unknown in Sweden, and with this movie and this main course, my objectives were achieved on several occasions with different ladies. laugh

Moose is the only read meat that I've used, but it was great.
