Mixed up a small batch of RoughRider meat sticks using 5 pounds brisket trimmings and 4 pounds of buffalo burger. Stuffed some with 21mm mahogany collagen casings and some in 1 ½” mahogany fibrous casings for some summer sausage. ![[Linked Image from imagizer.imageshack.com]](https://imagizer.imageshack.com/v2/640x480q70/922/TWp91i.jpg) ----- These were smoked in two batches in the GMG Davy Crockett, few hours of smoke and then finished them in a convection oven. ![[Linked Image from imagizer.imageshack.com]](https://imagizer.imageshack.com/v2/640x480q70/923/UCgaBF.jpg) ----- Both the meat sticks and summer sausage have an excellent flavor with a medium heat level. Could you give us a hint on what kind of flavor it is? Bold flavor that is a please all, touch of heat that isn't overwhelming. Perfectly balanced traditional meat stick.

Do you sell the sticks or just the mixins? No, not a professional licensed meat processor, just do it for ourselves for fun. We have the seasonings, cure, encapsulated citric acid, carrot fiber, meat bags, natural, collagen and fibrous casings and many other processing supplies in stock for anyone that may be interested. A very large inventory of BBQ rubs and sauces also. Normally shipping orders 6 days a week!
