I was gonna give you some of the antelope steaks but they are a bit gamey. My dad ate the tenderloins from the goat and agreed.
I'll hook you guys up with some 'strap steaks from the whitetail instead.
We're gonna try the wild swiss hog this weekend. Life is rough....grin
The deer had the hide on for 4 days, 60-30 degrees.
Soaked the steaks overnight in saltwater. Fried hot for 2-3 minutes a side in a little olive oil.
