Well, It looks like it's going to be BBQ Beef brisket for the family and guests tonight. It's been smokin at 220' since 2 am and shooting for internal temp of 200. It's 2:30pm now and the "flat" is at 195' and the point is at 170'. I'll be serving it at 5:30 pm tonight. Rubbed liberally with Dizzy pig "cow lick" and cooked "low and slow". Can't wait till dinner tonight!

Was it pulled or sliced ?
You mentioned shooting for 200 so I'll assume at least some was pulled apart for tastey sammiches .

Yep , born and raised in Neew Yoark State .
Only tried one brisket , I remember it was falling apart tender , looking back at the pics though I guess I may have run a knife across some of it blush
It was dang good !!! Hope to do another one soon.

You "pull" pork, "slice" brisket and maybeee you "chop" left over brisket for sandwiches.

I usually take them to 165 then separate the point from the flat, foil the flat and take it to 190. Let rest 30 minutes then slice. The point goes back on neked for burnt ends.

Now that does not surprise me!!! grin

I grew up in Texas but have lived in Indiana, North Carolina,
Kansas, Arizona, Alabama and Germany, plus eaten so called BBQ in many other states. When it comes to pig the southeasterners do an excellent job.

However when it comes to beef and especially beef brisket there are two states where you can get decent BBQ. Those are Texas and Oklahoma!!! grin
