A lot depends on what you want in a rifle. If you want 8# or less, 22" barrel, you'd better pick the .270. If you can tolerate another 1/2 or 3/4#, w/ 24" barrel, the 7mm RM is a step up in performance.
The 7 Mag w/ 160 Nosler Partition bullets is a superb combination, quite a bit better than the .270 in power.
All that said, I like the .270 in a smaller package and accept the step down in performance as the price.

I was gonna say they're both too common for my tastes, so get a .280 or .264 Win Mag, but then Avadadro hit the nail on the head with a .270 Weatherby Mag!

You might consider the .280 Rem. NOW your'e talkin'! It'll do anything the other two will cheaper and sweeter.

If you can shoot it will do the job. If you can't, it won't--
I think that goes for 90% of the cartridges in existence, if not more

I have several .270 Win's but when i think I need a magnum I reach for my .270 Weatherby Magnum. All real magnums wear belts.

My initial suggestion would be to go w/ 270 WCF but, relative to 7mm Mag, bullet selection sucks.
I'm somewhat "anti-mag" but, if you eliminate the '06 right off the bat, 7mm Mag is ok.
280 Rem is better than either, IMO.

280 Rem is better than either, IMO. I think the 280 is a great cartridge.....But.....How can the bullet selection suck for a 7 mag? Do we mean the most popular belted cartridge of all time? All the bullets suck? All the 7mm's? But the 280(less popular)is better? Has more/better bullets?...last I checked both were .284; how can the bullets suck for the 7 mag,,and be "better" for the 280? And, I mean....really.....what exactly is it that a 280 does that a 270 can't do....seriously....I just have to hear this... ....and precisely "how" is it better than either a 270 or 7 Mag? I hear this from the 280 fans all the time....they really can't be serious.... I swear a lot of them are soft.... I think 280 people are former dry fly fishermen who got tired of Fly Fishing Magazine, and decided to vent their obsessive/compulsive fly fishing habits in rifles and cartridges...there must have been a rash of them 15-20 years ago when every 280 looney was running around having 280's built by high-end custom makers....funny thing is I have not seen a 280 in a hunting camp in years I wonder if anyone hunted with the things? How anyone could, with a straight face, look you in the eye and say that a 280 is "better" or holds some secret advantage over a 270 or 7 mag, is beyond reason....
The 280 Remington is overbore.
The 7 Rem Mag is over bore.

I must be the exception Bob. Nobody's EVER accused me of being OCD, and I have always fished under unless there was an absolute frenzy going on on top. Maybe that's why I had to AI my .280 to get excited about it!

So, the 270 Win is generally packaged in handier, lighter, shorter barreled rifles - and is pretty close to the ballistic equal to the 7 Mag with less recoil and muzzle blast...
But the 7 Mag shoots those dandy .284 bullets....
Thus, the 7-08 is the perfect rifle for the man who wants the best of all worlds! Even more handy with the SA, even less recoil, runs a 120 like a 270 runs a 130, and heavy .284 bullets at good enough speeds, to boot.
I'm a serious 270 Win fan and have been for many years, much prefer it to a 7 Mag, all things considered; however, the last few years of shooting my 7-08's have put them ahead of even my beloved 270's....I think...grin.

Cast: As a fly fisherman myself(along with a passion for chasing anything with fins since I was 6 years old)I am making fun of myself, because I'm a former FlyFishing magazine subscriber!) Just could not help poking fun; I love the 280,and have owned and hunted with several, including those expensive wood stocked sporters I made fun of....but I hunted with mine And I love debates with the 280 guys, many of whom declare it the "best" or ascribe other magical qualities to it possessed by no other cartridge.I've owned and hunted with all three(270,280,and 7RM)and if the 280 has anything the other two don't,I can't see what it is... DJ: IMHO the 7/08 is the best thing you can squeeze into a 308 case

Flip a coin... Spend more time picking out the best bullet for the job, as about any cartridge in the range you are considering will do a fine job. Good luck deciding!

It's comes down to picking the "feel" of the gun you want, then choose whichever cartridge it is chambered for.
For me, that would put me in the lighter/shorter camp, so 270. But I'd go short action anyway, so something on the 308 case.
