C'm on, guys, help me revel in memories of my grandfather's fish-camp hushpuppies.

Here's the recipe �

Fishing-Camp Hushpuppies

Ingredients
2 cups coarse [preferably stone-ground] yellow cornmeal
1 Tbs flour
1 tsp baking soda
1 tsp baking powder
1 Tbs salt (or less if you prefer)
6 Tbs chopped onion
1 egg, beaten
1 cup buttermilk
0 tsp sugar [crucial omission!]
plenty of HOT peanut oil [a gallon, say � or more]
[all measures �more or less� � except, of course, �0 tsp sugar�]

� Mix and sift the dry ingredients.
� Add the chopped onion.
� Combine the egg and the milk. Add �em to the dry ingredients and stir all into a stiff batter.
� Drop by humongous spoonfuls (about 2� x 3� inches or more) into deep, HOT [as hot as you can get it] peanut oil while the breaded fish filets are frying, or after you take the fish out.
� They�ll rise to the surface of the oil when they�re done (when nearly all the inner moisture has been driven out of 'em).
� Scoop �em out.
� Drain �em on paper towels [or on old brown paper grocery sacks for historical authenticity and ambience!].
� You�re on your own from here. You�ll figger-out what to do with �em.

This recipe comes from watching Dr H C Fountain (1880-1977) make �em in camp.
Bass-fisherman, fox-hunter, houndsman, dentist, maternal grandfather of Ken Howell (in the order of his priorities!), he made �em several times a week for well over half a century. To tell when his oil was hot enough to fry the breaded catfish filets, he floated a kitchen match in the hot oil. When the match lit, the oil was hot enough.

If I could eat 'em now, I'd add a jalape�o or two. Or a dash of chipotl� Tabasco sauce.

At the risk of being branded a heretic I will admit to (confess, if you insist) that Martha White Hush Puppy mix is my very favorite. Mix water with the package and let the mix stand for 5 minutes and it's ready to go. You could add any spice you like, of course, but they already have onions in it.

Y'all go ahead and heap all the abuse on me you wish....I can take it....I'm a river fisherman running trot lines, limb lines, jugs or what have you for almost 50 years and I know whereof I speak.

I used to wear them because I was supposed to - the same with wingtips, but I always thought that they were both ugly. smile

MC, Think I'll go thaw out and cook some of those Tenn River cats out tomorrow and make up some of those hushpuppies. Plenty of onion and Jalapenos in them just make them better..

MC, I love the Martha White mix. It is absolutely YUMMY and easy to fix. 2 of my basic requirements. grin

I doubt that Martha was even born when I last had any of Doc's hushpuppies. Does her mix include sugar? (Common kiss of death!)

I don't fish, but I spent years � day and night � sculling among the SW Alabama chinquapins and cypresses on trot-line, bush-line, and jug duty with my Fountain uncles � and baited beaucoup hooks for em � plus not a few years with the over-size landing nets that I'd made for Doc.

BTW, FWIW, Doc heated his several-inches-deep peanut oil in a big enamel pan over I-don't-remember-how-many butane-burners.

Now, just thinking about those catfish filets and hushpuppies brings all that back.

Bass filets are delicious, of course � but deep-fried catfish filets are mucher deliciouser, and hushpuppies deep-fried with 'em or right away in the same oil are to kill for.

'Tain't easy bein' senile, but it has its times!
