Wahoo, swordfish, yellowtail, thresher/mako/leopard shark and grouper from the salt.
Brook trout and walleye from fresh water.

Haven't tried them all yet, but my favorite so far is Dorado. Grilled over open flame with a little bit of cilantro butter and lime juice. That's the next thing I want to catch..!

I'll take fresh cod over halibut any day,but I'm with ya on the Chilean sea bass, delicious! Although I won't buy it anymore.

I don't have a single favorite. Ocean fresh chinook or sockeye on the grill is very, very hard to beat. For white fish, halibut, lingcod and rockfish are all good.
But for all time favorite, I'd say either lightly seared or sashimi style tuna is amazing.

salt water = toss-up between orange roughy and halibut
fresh water = toss-up between northern and walleye
