Last sunday I caught a 12 pound buck stealhead, Now for those of you who are not in the know a stealhead is a Rainbow trout that has gone to sea and returned to the river. Stealhead are the finest eating fish there is bar none. If you havent tried you just do not know what you are missing. Stealhead fishing rates somewhere between pure lunacy and watching your first born come into this world.
So how to fix this delicacy into table fare.
I have found the ultimate fish fillet cooking machine... what is this wonderus devise you ask? It is a large size GEORGE FORMAN GRILL. This thing cooks fish like nothing I have ever tried. Just heat it up, directions say cook on low...wrong... use almost high... directions say cook for 4min. wrong again 6. But first use your favorite seasoning salt to season fillet. place fish on grill close lid and wait. The fish will become braised on the meat side the skin will slip off and the flesh will be oh so moist and tasty. I may never Bar-B-Que a fish again.
If you like electric grills check out Meco. They will outlast the foreman about two to one.

I BBq my fillets with the skinside on the grill. When the fish is done I slip the spatula between the skin and the meat and place on a warm plate. I agree with the hot grill. Spring is coming I can't wait for the first spring king salmon.pak
