My tomato and pepper raising buddy had a secret recipe for his canned salsa. It is very good. I found out that his secret was a mix with the directions from WalMart.

I've been eating those black bean chips so much, I think I'm wearing down my teeth! They are good. I can't eat peppers so I don't know salsa enough to comment on that one, but the chips are really good.

I don't make salsa verde, but I do make loads of this pico de gallo when the roma's are producing.

2 Tablespoons diced onion
2 Cups roma tomatoes chopped into 1/4" cubes
2 Serrano chiles finely chopped (1 for mild/medium)
2 Tablespoons finely chopped fresh cilantro
2 teaspoons sugar
2 teaspoons salt
Juice of one lime
1/4 cup Mexican beer

Combine all ingredients and mix well. Chill in refrigerator at least 30 minutes before serving. Consume the rest of the beer while waiting. Makes about 2 cups. Enjoy!
