I love cooked liver and make a mousse from deer elk and bear livers.

Because of parasites would not try it.

Not the raw liver, but I have eaten raw elk heart. Once there was a sushi chef in camp and he staked down an elk heart in the creek to drain out all the blood then prepared it in thin slices for everyone to partake. It was pretty good and nobody got giardia from the creek water.

I don't really like liver in any form because it tastes like liver.

I normally don't eat either the heart or liver...raw or cooked.

I'll usually bring the heart and liver out then cook and grind it for my dog. A few years ago my Uncle informed me that he loves elk liver, so I've given him the livers of my last two elk.

A number of years ago I put the heart and liver of my elk in a 5 gal bucket of water to soak. A while later, I went outside and found my Golden Retriever starting to eat the elk's heart. She had already eaten the whole liver, and her stomach looked like she had swallowed a basketball. She spent the next few days (and nights) outside in her kennel. sick

One of my favorite things to do after killing an elk was put a big ol pinch of copenhagen in with nasty, elk bloody hands. I don't chew anymore though (hence: was)

I confess, I eat slices of both elk and deer liver straight from the critter. I've done that for years and it's really delicious.

in the book Empire of the Summer Moon, the author writes that the favorite delicacy of the Comanche was the liver of a freshly killed buffalo, with the gall bladder squeezed over it.

must be something about fresh livers from big game animals...

A buddy I guide with has taken a bite out of the heart of every bull hes ever guided or killed, damn nigh thirty years! I admit I've done it whenever he's around too. It's probly not too healthy but it's worth it just to see the faces of the hunters!!!! They think you're some kind of mountain man throwback!!!!!PRICELESS!!!

Never tried it. I did take a bite of trachea once. It's overrated, methinks. The trappers in the early 1800's used to eat raw liver of whatever they had killed and dipped it in bile. And then there's "Liver Eatin' Johnson" who dined on Crow Indian livers.

I did eat a raw dove once. It was less than shabby.

I've eaten, or taken small bites, of elk, mtn goat, mt lion, deer, and bighorn.....testicles, trying to live up to a local dare.

I've field dressed many a whitetails and returned some time later to the kill site. More times than not the coyotes have eaten nearly everything...except the liver. If it isn't good enough for them, then I don't want it either. Just my observations...to each his own though.
