Well, no one has responded yet. I've only made them once. I just made up corn bread batter to make mini corn dogs, and made hushpuppies out of the what I had left. Turned out pretty good.

Being that my wife make these all the time for our grouper and snapper frys, here are 2 versions: 1) 1pkg hush puppy mix, add 1 small chopped(fine) sweet onion, 1 tablespoon or 2 of finely chopped, pickled jalopenas. 2) 1 pkg hush puppy mix, same small onion, 1/2 red bell pepper finely chopped.
Either has produced great results, she uses a teaspoon to dip, so they aren't too bready. Be sure to dip spoon in a container of water or hot grease, to help the scoop drop from spoon.

Only thing I do different is to increase the amount of onion and use chopped onion rather than grated. I like lots of onion and if you leave them in chunks you get good flavor.

I use a generic recipe that's on the back of the corn meal bag.
Corn meal, Milk Egg Oil Etc.
But I add a special ingridient that an old superintendent of mine told me.
You know the Texas Pete vinegar pepper sauce, so e put on their collard greens?
Take the cap off an get three or four of the little Tabasco peppers out and chop them up very fine. Add this to the hishpuppie batter and cook.
These are very spicy peppers by themselves. But just a small morsel in each hishpuppie add a great flavor and a bit of a bite.
Very good.

I do add a couple of shakes of Tabasco in place of the chopped jalapeno though.

All good recipes.
Most important thing with any batter is to not over work/beat. In this case, lumpy batter is best AND let it rest for about 5 minutes before frying.
