To one degree you are correct. Here in Texas we do have a menagerie of critters from which to choose. And as you point out, I am afforded the luxury of getting to hunt and shoot enough, that whether I shoot with a rifle, pistol, bow or camera and what I do shoot is a matter of personal choice. To the OP, with 2000 MR powder and a 25.5" barrel, you should easily get 2950 fps using 140 gr bullets. Work up to that carefully, but 2000MR or Big Game are probably going to give you best velocity in that bullet weight with that cartridge.

One of the reasons I shoot the 7-08 with 140 gr. bullets is that I do not want 3,000 fps. For the type of shooting I do, MVs of 2,800 fps or so do less meat damage than those of 3000 fps or over. If I wanted MV's approaching, or exceeding 3K fps I"d shoot my 7 mag or 7 STW. Of course, your mileage may vary.
