As others have said, buy a good binocular and then get out in the field and mountains during the off season and start scouting. I suggest spending the $$$$ for a top quality binocular before buying a spotting scope. With an 8x42 +/- power binocular, you'll be able to do a whole lot of looking and learning how to use the binocular.

I've been using a 7x42 Swarovski binocular for many years and it does just fine for me.

Utah is a great State for Mule deer and other game. Get out in the field and start glassing. You'll learn to spot the deer.
