The Adirondaks have their season in the begining of November. Less chance of ice up. I hunt with a canoe but don't hunt out of one cause the deer hightail it as soon as they see you . There is almost no way to get a buck shooting out of a canoe. I have only paddled up to a few in 25 yrs of canoing. Now, using a canoe to get into remote parts of public land is another story. It really sucks to have ice up though.

Thanks for all the suggestions. To clarify, we'll use the canoes to move hunting sites every few days but will not hunt out of them.

You're on the right track with the Buffalo River. Arkansas has $300 over the counter non-resident licenses that come with tags for all big game, and covers small game as well. If I recall correctly, the zone that the Buffalo River is in has a three week season that usually starts the 2nd weekend of November and has a bag limit of two bucks and one doe. Arkansas also allows you to check in your kill by phone, so you wouldn't have to worry about getting to a check station.
The timing puts you close to the peak of fall foliage, and the weather is usually moderate. ^^^^^ This. One of the most beautiful places you could visit, especially in the fall. Good hunting (pretty rugged area that doesn't get a lot of pressure )and fishing (lots of small mouth). Give this a good look. You will not be sorry.
