African Sardine Stew

Ingredients

1
medium sweet onion

1
medium red bell pepper, stemmed and seeded

1
ripe roma tomato

1
scotch bonnet pepper

1
tablespoon vegetable oil

1
10.25 oz can tomato purée

3
chicken bouillon cubes

1
tsp fresh thyme leaves

2-4
, 4.4-oz. cans of sardines, drained

RITZ Crackers, for serving
Preparation
Step 1

Combine the roughly chopped onion, bell pepper, roma tomato, and the scotch bonnet pepper in a blender carafe or the bowl of a food processor and chop or pulse until everything is coarsely chopped, about 5 pulses or 5 seconds.
Step 2

In a large skillet, heat the oil over medium-high. Add the chopped vegetable mixture and cook, stirring frequently and scraping the bottom of the pan to ensure the food does not stick, until the liquid reduces sauce thickens, about 6 minutes.
Step 3

Add the tomato puree, remaining half of sliced onion, chicken bouillon, and thyme to the vegetable mixture. Bring to a boil. Add the sardines and return to a simmer. Cook over medium heat, stirring occasionally, until sardines are heated through, 5 to 7 minutes.

Ive fried sardines, good ones, with some onion and tomatoes and it turned out really good but I love sardines.

Like the Costco season brand sardines. And they're really good for you

What, where's the taters, carrots, peas, sweet corn, and green beans?

Substitute chunked turkey for the sardines, and add some homemade flat egg noodles.

Now you have a meal in a bowl.

They are pretty good. Also, when making broth throw a bunch of them in for a thicker, richer broth (I think it's the collagen? ).

I've got a recipe for some anchovy sauce I need to try sometime when the wife is away. Maybe next week, she takes our old dog to the cardiologist and visits her family while down that way.

Think I'll get some heart, liver, or tongue out of the freezer for the grill too.

I was 60 miles offshore 2 days ago catching albacore and we used anchovies for the live bait stops and “chumming” with great affect but it NEVER occurred to me that I was using someone’s dinner as bait. 😂. Sardines, anchovies, herring….that’s only used for catching real fish….

I've always liked sardines, but used to think the same way about chovies.

Why not use them to catch something good to eat.

My first thought was yuck. But knowing on occasion I like sardines, especially the top shelf ones from Costco, has me intrigued. A rich, spicy, tomato based sauce with not falling apart sardine chunks on a ritz.
Pita crackers would also be good.
Certainly worth a try.

No. Does not sound very good. Certainly not an entire stew with sardine flavor.

And I like sardines. But a little goes a long way. A snack, not a whole meal.
None for me, but not because of the sardines. I like sardines. Not a big fan of tomato soups, though. Heck, I only eat tomato based pasta sauces a few times a year.

Unfortunately, majority Americans like bland, tasteless foods and are afraid to try anything different so they'll go to red lobster or olive garden. Cracker Barrel for exotic foods ( of course its bland tasteless processed crap)

Love sardines, the only anchovies I've ever eaten were on a pizza.

Ordered "everything" and got those nasty, hairy, fishy, salty things.
Made that mistake again, once. For years I'd order, "No Fish".
Quit doing that after every shop around here told me they don't
even have them.

Damn things are as nasty as caviar.
