netflix had a documentary series about cooking. one episode was a guy from Australia that cooks steaks.

i wanna say he dried aged some 200 days. basting with beef fat every day.

What’s the price point on that? $200?

Had Australian Wagyu Ribeye from Costco last night. 4 lb cut into 4 steaks then halved again when done. It was $145 for the piece.

Very nice, tender and well aged. But so rich and buttery, I really had a hard time finishing my cut.

I've been to Lugers twice for retirement parties.
Both times the steaks lived up to the reputation.
Still, I prefer the ribeyes at Smith and Wollensky.

That’s the going rate at Costco, which is cheaper than the Wagyu farm we’ve bought from before ($100/lb).

Your a lucky man with great Costco prices. Similar Wagyu cuts at our Costco and online run $80–95 a pound.

I haven't been to NY since the 90's and yep, we all hate NY - or I should say we all hate the the Marxist politics there - but NY has some damn good food - I'll give 'em that.
