I've brought this up before and been vilified by those who have never had the opportunity to make the comparison, but I'm dumb enough to try again. Soy sauce smells exactly like the hog barn at the county fair. This is not meant as a criticism, merely and observation. (I happen to think that the smell of the hog barn at the county fair is a nice odor that evokes pleasant memories from the past.) (Not that kind, pervert!)
I've had "Chico and the Man" before. I did not like it because it pours out of the bottle instead of dropping out. (Remember my level of sophistication?) I will get it again and see if I still have the same olfactory response. I appreciate your input.
One time I showed a friend the difference. I had him taste a drop of Kikkoman and then taste a drop of La Choy. When the La Choy hit his tongue he accused me of trying to poison him.
I cringe when I read posts about using Dale's or Allegro marinade because they're made mostly of the chemistry set fake soy sauce.
After living three years in Japan and another three in Asia it's Kikkoman's. There area number of different kinds of Kikkoman soya sauces including gluten free.
Real soy sauce is readily and reasonably had. Kikkoman is in most stores and very reasonably priced.
mm - I followed your advice and purchased a bottle of Kikkoman. The difference is amazing. I made stir-fry (pork steak that I grilled and then cut up. carrots, celery, garden green beans, snow peas, green onions, yellow onion, cabbage) using sauce that the wife made using Kikkoman. I also added more to my plated food. Thanks for the advice.
I'll also say there's a similar situation with commonly available Worcestershire sauces. Skip the Heinz and French's because Lea & Perrins is the one to get.

I've never had it but there's a fancy ($$) soy sauce made in the US that is fermented in bourbon barrels. The same guy is making Worcestershire sauce too.

You may be basing this on the fact that the soy in a couple of these is hydrolyzed & the L&P isn't. ?
But otherwise, Frenches is by far my fave, L&P second & if there's only Heinz I'll do without. And, I can taste the diff in some soy's.

You couldn't pay me to use French's OR Heinz.
I’m not sure I even knew anyone other than Lea & Perrins made Worcestershire sauce.
We always buy kikkoman but the sushi joint we frequent has some in a big glass wind bottle looking container that is flat out the best thing I’ve ever had. It’s like liquid crack.

Define far less. The Kikkoman I have has 38% less than their regular offering. I believe it has less sodium than the lite Kroger fake soy sauce you mentioned in the past.
If you're on severe sodium restriction then there may be foods you simply can't have.
