My guess is, he'll change his tune if you tell him to just keep it all. That you are sorry you used his business in the first place, and he's welcome to just keep it.  He can't legally sell it. It hasn't been USDA inspected. Packing companies can only be paid the original processing fee if someone else wants it. But, I don't see someone else wanting to pay $425 for someone else's deer bologna.  Im almost at the point bud. Believe me. Knowing him he'd probably sue me and the magistrate would charge me double what I owed him...lol
