Is that the weight after trimming? A 16# untrimmed brisket could come down to 11#'s easily and then lower yet after the remaining fat renders.

Orion used term well marbled. To someone who does this for a living that means low yield. 25 people? All adults? Ratio of men to women, also age group? What meal is this going to be? ya a "well marbled" brisket usually means half of it is soap bar tallow from what i have seen up here in the great white north. not exactly a bbq mecca around here.
