Always do this for Thanksgiving and it’s always a hit.

Kinda sweet and salty with a carmelized crunch.


1 (one) CUP SOUR CREAM
1 (one) 7 OUNCE BOX OF JIFFY CORN MUFFIN MIX
2 EGGS
2-3 TABLESPOONS SUGAR
½ CUP MARGARINE
CHEAP CAN OF CREAMED CORN
8 ½ INCH CASSEROLE DISH (THINK YOU COULD ALSO USED SMALL BROWNIE PAN)
PREHEAT OVEN TO 375 DEGREES AND MELT MARGARINE IN PAN
MIX ALL THE INGREDIENTS TOGETHER AND POUR INTO MELTED MARGARINE WHICH WILL THEN SURROUND THE MIXTURE. BAKE FOR APPROXIMATELY 40-45 MINUTES UNTIL THE TOP CRACKS AND THE SIDES ARE GOLDEN BROWN. YUM!!!

Normal basic corn bread is just mediocre, so I prefer either the sweet and savory type which your recipe seems to favor, or the spicy Jalapeno corn bread.

looks fine, but I prefer just regular, old fashioned, standard scratch corn bread.

Agreed, Sam. We try to avoid mixes, margarine, canned food of any kind as much as possible around our house.

I made a big batch of scratch corn bread the other day to tear up for cornbread stuffing with chipotle peppers and andouille sausage for Thanksgiving dinner. It was a big hit.

Corn Pudding/Casserole is a holiday staple around these parts. Hardly ever any leftovers. Good stuff!
