is good chit.....hard to find up here in the land of the Norwegians though who's only seasoning is a lil bit of black pepper laugh i seem to be the Norwegian that broke the mold though as i like flavor in my food....

Okay, here ya go.

Ingredients...

Ground or chopped meat (Traditionally boudin is made from pork liver, because the flavor is strong and needs to be "stretched".)

Oil of choice (traditionally rendered lard)
Onion
Bell pepper
Celery
Garlic
Green onion, parsley, or both, chopped
Salt
Pepper
Red pepper or pepper sauce
water
cooked rice

Saute' meat in fat until brown (use a roux if using "white meats" like turkey).
Add vegetables, with the exception of parsley, and continue to saute' until tender.
Add water and simmer until veggies dissolve, making a "gravy" with meat.
Season with spices and pepper sauce or "cajun seasoning" to taste.
Add chopped parsley or green onion.
Mix with rice until desired ratio and stuff casing as with any other sausage.

That's it and remember, coonass's never measure anything. smile

Everywhere here sells Boudin. I normally don't make any but will pick up some from time to time. It's one of those things you get a certain gas station and it's better than anywhere else.

Just because this thread needs more coon ass...yeah you gotta be at least part coon ass to make the saying come out right.

Don's in Scott sells deer sausage, but no deer boudin. Must be pen raised, not wild, unless Louisiana's laws differ from Texas.

I think I have one. I'll have to look thru my stuff. Give me a few. Regular deer sausage is pretty popular here, deer boudin I don't know if I've ever personally seen it or eaten it.
