ddj is good chit.....hard to find up here in the land of the Norwegians though who's only seasoning is a lil bit of black pepper i seem to be the Norwegian that broke the mold though as i like flavor in my food....

Okay, here ya go. Ingredients... Ground or chopped meat (Traditionally boudin is made from pork liver, because the flavor is strong and needs to be "stretched".) Oil of choice (traditionally rendered lard) Onion Bell pepper Celery Garlic Green onion, parsley, or both, chopped Salt Pepper Red pepper or pepper sauce water cooked rice Saute' meat in fat until brown (use a roux if using "white meats" like turkey). Add vegetables, with the exception of parsley, and continue to saute' until tender. Add water and simmer until veggies dissolve, making a "gravy" with meat. Season with spices and pepper sauce or "cajun seasoning" to taste. Add chopped parsley or green onion. Mix with rice until desired ratio and stuff casing as with any other sausage. That's it and remember, coonass's never measure anything.

I'm sitting in Scott, LA right now for work. Best Stop and Don's Specialty Meats both make killer boudin. Hard to stay out of those joints. Pat, there used to be a market that made great boudin in Port Neches, I believe, but I can't remember the name of it. It's been too long. Familiar with it, or if it may still be open? Close, it's in Port Arthur...Nick's Grocery. I started to post something about it, but didn't want to get my neighbors in Louisiana twisted about the best boudin in the world coming from Texas. Ouch!

A guy in my camp bought a deer processing business earlier this year. I killed a 90 lb maiden doe with my bow mid October. Since I already had a bunch of meat in the freezer I went for something I had never had, smoked boudin. I had the whole deer done yielding 104 lbs of pure eating delight. I had not considered they mix deer/boston butts 50/50 then add a equal amount of rice. And why haven't I been told about this sooner?....grin We are cooking some at the sausage cook off/ scoring session/ forum get together at my place in February. Bullie and 4th might be coming down from your way, yall should car pool. I can put yall up in my camp the night before if yall want. We are trying to get deer sausage from every processor in the state for the competition....there may even be a judge position open

Everywhere here sells Boudin. I normally don't make any but will pick up some from time to time. It's one of those things you get a certain gas station and it's better than anywhere else.

Don's in Scott sells deer sausage, but no deer boudin. Must be pen raised, not wild, unless Louisiana's laws differ from Texas.

We need a venison Boudin recipe I think I have one. I'll have to look thru my stuff. Give me a few. Regular deer sausage is pretty popular here, deer boudin I don't know if I've ever personally seen it or eaten it.
