Looks great, and you didn't kill it twice! Got to make venison liver and onions at 8000 feet last week, dang I had missed that.

Rare is the only way to go w. good meat!
I've had great liver n onions and gahd-horrible liver n onions. Never made them myself.

This is not last weeks liver, but it was cooked about the same way. Used butter and bacon fat in the mountains though! Not as rare as your roast, but medium to med/rare. Feels like chalk if cooked much more. I think that is half the problem with people that don't like liver.

I try to leave as little as possible in the gut pile, but that's me.
Ate a lot of chicken liver when I lived down the block from a fried chicken place in Athens, OH.
Calik, that looks pretty good. The outdoors are the best relish. Bacon fat never hurts.

byc, white tail numbers seem a little down in Aiken and Edgefield counties compared to what I remember last couple of seasons. But we're doing ok finding them--public land, still hunting. It's been a bit of a Laurel and Hardy show this season. Missed a 6x buck at 10 yards during muzzle loader. Am 1-1 on saplings however.
Used to be liver was like broccoli: unpopular with kids but loaded with vitamins. Was that another myth like margarine?
Bet Clint Eastwood eats him some deer liver. The coyotes can have the 'testines.
