OK...we need the recipe to THAT!

Take a few lbs of elk shanks, cut into serving-sized pieces, roll in flour, and brown in a skillet with olive oil.

Add to the crock pot with enough Kitchen Basics beef stock to cover it.

Add finger potatoes, salt, and Penzey's beef roast seasoning to taste (leave room to add the mushrooms later):

https://www.penzeys.com/online-catalog/beef-roast-seasoning/c-24/p-333/pd-s

Let that cook for 7-8 hours, then saute a big pile of baby portabellas in butter, add to the pot, and let that sit a few minutes before serving.

Looks delicious! Gonna add that to the "need to try this" list.

I'm no stranger to osso buco, but it's kind of cliche, don't you think?

I'd rather substitute it for lamb in arni kapama.

Hmmm.... that's a thought, but shanks in various stews is a standard as well. Yes, osso buco can be cliche, but it's just really good and pretty easy.

The fact is, there are so many amazing recipes out there that we can eat WELL these days.

Faked baked BBQ chicken. laugh

Here's how you BBQ chicken. Separate the coals on both sides so there is a center corridor with no coals underneath running the length of the grill. Wash, season, and place the chicken in the center with no coals underneath. If you have a grill the ends flip up on (Weber makes these), water soaked apple wood chips (small ones) are nice to spread on the coals a time or two. The chicken will be done in about an hour and a quarter to an hour and a half depending on the amount of coals used. At about the 45 minute mark, begin putting on the sauce until the breast meat begins separating. By keeping the chicken in the area with no coals underneath, it won't burn, even when applying the sauce.

Now you can make the best BBQ chicken in the world, after mine of course. grin
