Something along the lines of a small forest axe is mighty handy. For me, maybe not quite as big as you're describing, but certainly bigger than the average hatchet.

I have more than a few and the Hudson Bay pattern has been a long time favorite and more recently I've been using several Small Forest axe's (Gransfors Bruk & Hults Bruk) in my travels. For bigger jobs I rely on the old Collins.
