I don’t think I want to pay for 1920’s Griswold or Vollrath to have decent American enameled cookware.. but if I find one that isn’t roached out and under $500 I’ll definitely consider it .

Definitely an equipment pecking order here. Nothing wrong will good tools but I remember the $400 paring knife everybody was going gaga about.
