First thing ya need is lots of time and a deep cast iron skillet, bigger the better.

A pound of Hickory smoked bacon diced up to half inch pieces and browned crisp. Leave grease in pot.

A pound of Jimmy Dean Sausage browned with bacon and grease.

A pound of smoked beef sausage diced up, I like Hillshire.

A pound of diced up smoked pork chops..

A really big sweet onion diced.

Some garlic cloves sliced up.

Couple of Anaheim peppers diced.

One bag of Hurst Hambeens 15 Bean Soup, Cajun, 20 oz, you can order 4 packs off of the internet.

Half bag of small red beans soaked over night.

Drain and rinse beans and dump in pot after other ingredients are browned and in.

Couple of bay leaves, basil and thyme.

Coarse black pepper to taste.

Seasoning salt to taste. Do it last as the meats are salty.

Smoked Paparika to taste.

Toss in some red chili flakes or some hot chilis if ya got them.

A little brown sugar, but go easy, same with the vinegar.

A 16 ounce can of diced Rotilla tomatoes.

Cup of your favorite sweet and spicy barbecue sauce.

One cube of butter.

Bring it all to a slow boil and simmer on stove till beans start to break down, then throw it in the oven with the lid on and bake it on 220 for a minimum of 4 hours.

Keep a shaker of red pepper flakes and Tabasco close by.
