Soft and white would be preferred. Usually brand new production.
It is not uncommon for an engraver to get a finished piece, remove blue, engrave & re-blue. The typical process.
But get that from the engraver.

that's what I seemed to remember, having watched a few at large gun shows. I always wanted to try my hand at it but kept so busy cutting lines in wood I never got around to metal except for checkering a few bolt nobs.
