For sure all you've mentioned is important.
I've got a couple knives that are S30V and I'd give the nod for edge holding to the Paul Bos heat treated Buck Vantage Pros for sure.
In my pocket most days when it's not hunting season is a ZT 0566 with the Elmax blade, which replaced a ZT 0560 only because the 0560 was just too big for my pocket.
While I wanted the Elmax to get "undivided attention sharp" it really doesn't quite match the S30V of the Bucks, but it's tough, tough steel and will keep that slightly less scary sharp state for months of abuse around the place here.
Anyways I thought I'd share as I enjoy how creative he is with his testing.
