You never want to butcher an animal until after it has a chance to rigor on the bone.
Guaranteed to be the toughest, most rubbery thing you ever put in your mouth.

That said, I love burgers, elk or venison.
Burger prepared correctley is superb, but done incorrectely it isn't even edible.
