We are going "camping" in 2 weeks with family, back home in NY.

It's not roughing it by any means, as we will be in cabins with electricity, but it is what my family has done since before I was born. Heck, mom and dad spent their honeymoon in a cabin with no electricity in July 1981.

We are on somewhat of a budget this year, but we aren't eating hot dogs for every meal.

What are your favorite things to make at camp?

We will be doing the usual; chicken, hot dogs, burgers, etc. Is there anything you have to make over a campfire when you go out?

If so, what is it?

One of the things I really want to try over the fire is this bean recipe. I have made it in the oven 4 or 5 times, but I'm planning on doing the fire this time.

1 can (15oz) Pork & Beans (undrained)
1 can (15 1/2oz) Kidney Beans (rinsed & drained)
1 can (15 1/2oz) Great Northern Beans (rinsed & drained)
1 can (15oz) of black beans
1 can (15oz) Hot Chili Beans (undrained)
1 can (15 1/2oz) Butter Beans (rinsed & drained)
1 pound ground Venison (fried & drained)
1 1/2 cup Brown Sugar (packed)
1 1/2 cup Cheddar Cheese (shredded)
1/2 cup Ketchup
Smoked Chipotle Tabasco (however much I deem necessary)
1 med. Onion (chopped)

What do you do?

I always make sure to rinse and drain my black beans too. I also like a little bit of liquid smoke.

Love doing smoked chickens, or a 4-5 bone prime rib ! Full day project, during which, we partake of regular "refreshment" !

Also, love doing a dutch oven roasted, leg of lamb & roasted potatoes.

mikey, that's not too far away from my Best Baked Bean recipe. Can't see why your recipe wouldn't work in a Dutch Oven or hanging pot.

Like Rolly, I also add some liquid smoke, too.

i'm a big fan of the cast iron dutch oven. i like using a couple of chucks, some celery, onions, shrooms, carrots, taters and maters with a can of beef bullion and a little ketchup. i flour and season the meat and sear it real good both sides in the pot and then deglaze with the bullion and add everything else and sit it on a bed of charcoal with a lid full of charcoal. it don't take long.

Italian sausages with sauteed onions and peppers and marinara sauce.Cheddar brats and or jalapeno cheddar brats. Brats and kraut.

I do a lot of open fire, and Dutch oven cooking when I camp. Don't have a real favorite, as I am always trying something new.
Pork roast with 'taters and carrots is one that I have done fairly often.
Biscuits, breakfast casserole, cheese grits, and huge cast iron skillets full of bacon are always welcome at breakfast.

For something a little out of the ordinary I like chicken hearts and gizzards done in a dutch oven or in the slow cooker. To a package of hearts and gizzards add the following:

One can of cream of mushroom soup
One medium onion diced and browned in bacon fat
Worstershire sauce and Liquid Smoke to taste
Sea salt
Coarse ground black pepper

You probably don't want to be this "rough" but as a veteran of @15 years of Civil War reenacting here is one I made all the time. Carried an extra tin cup (held a bit over a pint) to cook in.

Fry out @ 1/4 pound salt pork remove meat.
Into hot grease a hand full (@ quarter cup) dried black eye peas or navy beans and hand full rice.
Pour boiling water (from coffee bucket before you make coffee) enough to cover the peas/rice by @ 1/2 inch. Boil until peas/rice soft add meat back long enough to heat back up, about 25 to 30 minutes.

Hoe cake or hard tack or wedge ass goes well with this.

Eat out of pan/cup

For me it would have to be the navy beans. I hate dried black eye peas. One of the few eats that I don't like. I can tolerate them fresh (roasting ear stage) but prefer crowder or purple hull. miles

One of my favorites is to saute up some bell pepper, onion, zucchini, and Texas Longhorn brand German sausage (made up in Spokane).
The sausage is so flavorful I don't even add any seasonings.

I think the best camping meal is always the "leftovers" breakfast burritos on the last day. Always seems to be some sort of potatoes, grilled meats, and corn or grilled squash. Fry up some onions, chilies, and garlic, toss in your left overs, heat, and add scrambled eggs to mix. Stir up and toss in some grated cheese and green onions, fill your heated tortillas and enjoy.
