Sick and feeling lazy tonight but wanted to contribute since I enjoy this sub forum so much!
Pork tenderloin roast, rice, green beans and a caprese salad.
There were spices and such in each dish to round them out and I will only mention one in particular atm...
Finishing a pork roast with thai chili sauce as a glaze is delightful...
Hope the Food Forum is well in 2016!
Regards

My wife made a chicken cous cous recipe. I was busy with something, lighting the fire or some such and didn't get to it when she got hers. I saw her sitting eating it and asked how it turned out. She said "it's a little spicy". She's not as "tolerant" of spicy (HOT, not as in "well seasoned spicy") stuff, but she will keep up with me sometimes and eats stuff I cook so I knew something was up. Yes, it was hot, pleasantly so, not overwhelming. Besides a couple of things I knew she put in there from the smell, I wondered what she had done to get the heat. I make some coarse ground hot pepper flakes from ones I grow and dry, but I didn't see any flakes in the dish. I also so no overt "redness" or chili type coloration. I was dying to know, so asked. She says "well, we were out of cayenne so I saw some "Hawai'ian" stuff you have up there in the cupboard". We got really lucky!!. Fortunately, the recipe called for only an 1/8 teaspoon of cayenne. She didn't really measure, just guessed about that much of my stuff. Much more and we could have had a disaster. She had found my "Hawai'ian Ghost" ground peppers. My sister got them for me when she was last there. It is HOT stuff. Dangerously hot! An 1/8 teaspoon for a pound or so of chicken and a pot of cous cous with broccoli in it and it's quite delightful, for me and my wife. I know many folks would turn away after a few bites. Now to understand better, I grow peppers most every year, for eating fresh, drying, and making salsa and "hot sauce" (think Tabasco and such). This year included everything from bell, ancho, and Anaheim on the mild side, to serrano, tabasco, Thai dragon, cayenne, and Habanero on the warmer end, with a few in the middle too. For me to say tonight's dinner was pleasantly hot is probably an understatement for those that think Pace picante sauce, even the jar marked that way, or a jalapeno is "hot". My wife done good tonight, without even knowing she was doing it! I hope you all had a nice dinner too! Geno

The drama continues,........... Hey, at least we aren't discussing the merits of Miracle Whip. OK, I missed this thread the other day or would have said what I'll say now. There are NO merits to Miracle Whip! The only Miracle about it is that it is still being sold to the suckers. Geno

Ham and scalloped potato casserole, with heavy cream, a light addition of five year old cheddar reserve, and a touch of nutmeg. Fresh green beans and crusty bread

Last night was pork centre loin, cut into 2 finger thick "steaks", S&P & sprinkle both sides with smoked paprika.
'bout 2 minutes a side in a smoking hot cast iron pan & then into a warm oven for 5 minutes, remove, tent & let rest for another 5.
Sides were sautéed sweet peppers & thin sliced cremini mushrooms, finished with a good dash of balsamic vinegar & sweet potato medallions (skin on), roasted at 350* in a little Olive oil & dab of butter + S&P.
Glass of Pinot Noir was a nice accompaniment !

Luckily there is a very nice older gentleman close by that lives near the river, I gave him about half the casserole so he could have a little something for dinner tonight, and leftovers to boot ! He was quite pleased actually

Two in afternoon by the time I had half decent mulberry wood coals going in the stiff wind on the lake ice, but then, potato sausage, baked potato, sour cream, margarine, bacon bits, buns, and Bush's baked beans.

Roasted beets, Pacific cod slathered in mayonnaise (the olive oil kind) with a very generous sprinkling of paprika baked in the 375f oven after the beets were roasted, along with a thick slice of homemade sourdough oat raisin bread (that has some grated orange zest in it too!).
My wife was a happy lady, she loves roasted veggies and fish.
I was too, the mayo/paprika method is one of my all time favorites for flaky white fish.

PS, you guys had me going through the mental database for the meaning of BGE. Finally got it.
