My wife is off seeing her Mom for the weekend. SWMBO is not a fan of Tex Mex but I grew up on it made by my Texan Mom so when she's away it's a Tex Mex fest in the Pugs household. Tonight is Moose Enchiladas.

I do add a single tube of spicy italian sausage to the moose as the game is so darn lean I need to add some fat. Lots of caramelized onions too.

A good Pale Ale in hand and I'm in heaven.

Went out for dinner last night to Biaggi's Ristorante Italiano was excellent!

Sea Scallops
jumbo scallops seared on iron and served over an asparagus, corn and pancetta risotto with a basil-leek reduction.

Last night was carnita nachos and Bud light at the drag races. An atmosphere of burnt rubber and nitro methane! A tail gate view of between rounds prep and test fire, loved it!

Wife arrived home from a working weekend at the beach place and I took her to our favorite Italian Bistro.
Best pizza this side of Rome and some sea scallops w/cream sauce and asparagus.

Breakfast today...

Egg Gravy. Made just like sausage gravy. Scramble a few eggs, add a tablespoon of butter and flour to the pan. When the flour is cooked lightly, add enough milk to the pan and let thicken. Season with salt, pepper etc. Serve over toast or baking powder biscuits.

This is an old family pioneer recipe. Cam across the plains from the east to the west with my family.

Try it, you might like it.

Add some crumbled bacon... Yummy

On the main OFSMC trail between Dryden & Sioux Lookout, NW Ontario !

Didn't go the whole way though, just 25kms out & back.

Temp was +5*C when we got home ! Marginal for the '94 MXZ Liquid !

Dan, I'll let Paul answer the were, but, I'm planning on doing a bit of that myself about 20 some "K",s from him.

I hope to get a bit of fishing in as well.

If Paul ain't to stuck up, we might sample each others cookin'

Mostly I'll likely spend more time putting t&g ash lumber on the walls, and ceiling.
