Looks great Dan.

I came home to find my daughter had made cheese stuffed and cracker crusted chicken thighs. She did a damn good job. No pics, I just chowed.

My gosh, that pork loin looks great Dan !

We had pork schnitzels last night.

Cut pork loin 3/4" thick & pound to "thinness".

Season meat, dredge in flour, egg wash & panko crumb.

Shallow fried in peanut oil until golden.

Hit with a splash of lemon juice & a touch more S&P.

Sides were hashbrown casserole leftovers, + baby peas & peaches & cream corn (both frozen).

Comfort food !

Used the rest of yesterdays pork loin to make an improvised pork teriyaki stir fry, with broccolini, green pepper, onion & some softened chow mein noodles.

Tasty.

Excellent chicken pot pie and a green salad with honey and avocado dressing, but the company was the best part of the meal.

Dinner tonight will be a spinach salad, ribeyes grilled over hardwood lump, parsley potatoes, green beans with a light garlic sauce, a tall glass of ice cold milk and mint chocolate chip ice cream.

Pork butt on the bbq, corn on the cob, salad.

Just finished off last weekends brisket by way of a killer hash and eggs.

Gotta keep this going. Fire up a big hunk on Sunday, sandwiches during the week, and a hash the next weekend.
